Oro verde: spesso e volentieri questo è uno dei termini con cui si riferisce all’olio extravergine d’oliva. Non si tratta poi di una definizione così sbagliata, data la ricchezza che la quasi totalità delle nostre regioni riesce a produrre.
Ma la realtà dei fatti vede un grande insieme, quelli degli oli d’oliva vergini, da cui poi è possibili classificare le varie tipologie, a cominciare dalla più pregiata (l’olio EVO). Gli oli d’oliva vergini sono ottenuti dal frutto dell’olivo esclusivamente mediante processi meccanici o altri processi fisici, in condizioni tali che non causano alterazioni o modifiche dell’olio e che non hanno subito trattamenti diversi dai seguenti: decantazione, filtrazione, lavaggio e centrifugazione. Ci sono poi delle eccezioni alla regola, ovvero quegli oli che vengono ottenuti tramite solvente o coadiuvanti ad azione biochimica/chimica o anche con certi processi di riesterificazione.
Prima di cominciare forse sarebbe meglio definire nel dettaglio l’olio d’oliva. Si tratta di un grasso che, a temperatura ambiente (20° circa) si presenta in forma liquida ed è costituito al 98% da una miscela di trigliceridi che viene definita “frazione saponificabile”, mentre il 2% restante è nominato “frazione insaponificabile”. Quest’ultima, sebbene rappresenti una minima parte, è molto importante per la struttura dell’olio, in quanto contiene una miriade di elementi quali catenoidi, sostanze fenoliche, idrocarburi e altro ancora, ovvero ciò che apporta le proprietà organolettiche dell’olio EVO.
Detto ciò, cominciamo a tracciare il percorso che vedrà definire le varie tipologie di olio.
OLIO EXTRA VERGINE D’OLIVA
Si tratta di un olio vergine d’oliva la cui acidità libera, espressa in acido oleico, arriva ad un valore massimo di 0,8 grammi per 100 grammi. La mediana dei difetti deve essere pari allo 0, mentre la mediana del fruttato è superiore allo 0. In poche parole, l’olio EVO non deve per alcun motivo mostrare difetti quali morchia, sentori di rancido o simili. Sicuramente, a livello qualitativo e di prestigio, parliamo del top di gamma.
OLIO VERGINE D’OLIVA
In questo caso l’acidità libera può raggiungere un massimo di 2 grammi per 100 grammi e una mediana dei difetti che può raggiungere un massimo di 3,5 (resta superiore allo 0 la mediana del fruttato).
OLIO D’OLIVA LAMPANTE
Qui l’acidità libera, sempre espressa in acido oleico, può essere superiore ai 2 grammi per 100 grammi, mentre la mediana dei difetti è superiore a 3,5. Anche in questo caso la mediana del fruttato resta pari allo 0.
OLIO DI OLIVA RAFFINATO
Da qui passiamo ad un’altra tipologia di olio, fuoriuscendo dalla macro-categoria “oli d’oliva vergini”. L’olio di oliva raffinato viene ottenuto tramite la raffinazione di olio di oliva vergine con un tenore di acidità libera non superiore ai 0,3 grammi per 100 grammi.
OLIO DI OLIVA COMPOSTO DA OLI DI OLIVA VERGINI E OLI RAFFINATI
Altra tipologia di categoria in cui l’olio è ottenuto dal taglio di olio d’oliva vergine diverso dall’olio d’oliva raffinato e olio lampante. Per questo tipo d’olio l’acido oleico non deve essere superiore ad 1 grammo per 100 grammi.
OLIO DI SANSA GREGGIO
Qui si parla di un olio ottenuto dalla sansa d’oliva, equivalente al composto ottenuto dal residuo della spremitura delle olive (fatto da noccioli, bucce e polpa pressati). In un certo senso, con le dovute differenze, la sansa d’oliva può quasi essere paragonata alle vinacce dell’uva (quindi non è un rifiuto).
OLIO DI SANSA DI OLIVA RAFFINATO
È un olio ottenuto dalla raffinazione di olio di sansa di oliva greggio e che contiene un’acidità libera non superiore a 0,3 grammi per 100 grammi.
OLIO DI SANSA D’OLIVA
Si tratta dell’olio ottenuto dal taglio di olio di sansa di oliva raffinato e di olio d’oliva vergine diverso dall’olio lampante. In questo caso l’acido oleico arriva fino ad un massimo di 1 grammo per 100 grammi.
Come vedete ci sono diverse categorie di oli ottenuti dalle olive, ma a conti fatti gli unici commestibili tra questi elencati sono: l’olio extravergine d’oliva, l’olio vergine d’oliva, l’olio d’oliva composto da oli raffinati e da oli d’oliva vergini ed infine l’olio di sansa di oliva.
